Those pictures! Took me back - a friend of a friend got married and asked me to make the wedding cake. In return, her mum who had come over from China and spoke not a word of English, (but we had some amazing conversations via her daughter who translated everything) made us some authentic Chinese meals, not what we think of as "Chinese food", and they were amazing. Thank you for sharing and bringing back such happy memories for me.

I must have the Fuzhou noodles! We also have Ban Mian in Malaysia, a noodle dish I only got acquainted with when I moved to KL. But overall, I miss all Chinese noodles! I didn't know my love for it until I left home for good; I think it's because like you said, you cannot find them anywhere else! And they are notoriously difficult to duplicate at home...
When I visited Malaysia when I was younger (my dad lived in KL for a few years), I remember going to an area where there was a significant Fuzhou diaspora there and we were able to have pretty authentic Fuzhou food there!
My cousin makes his own during CNY (recipe from his dad I think?), and if I'm lucky, I get to eat some :) maybe you can try making some if you have the energy!

Oh, I must research this :) I only remember fuzhou fish balls if you ask me XD
I also miss Fuzhou fish ball! Nowhere in the U.S. I could find truly authentic ones :(

Okay, I am going to start plan for my next trip to China, and, start dieting now to lose some weight so I can gain it all back, plus some! 😅
